Chilli bacon, butterbean and savoy cabbage soup
1 stick celery, chopped finely
2 shallots, chopped finely
1 large clove garlic, chopped finely
4 rashers streaky bacon, chopped
1 red chilli, deseeded and finely chopped
4 small potatoes, sliced finely
Half a medium sized savoy cabbage, shredded finely
1 tin butter beans, drained
1.5 pints vegetable stock
1 tablespoon vegetable oil
Salt & white and black pepper
Fry the celery, shallots and garlic gently in the oil for 5 minutes until soft. Add the bacon and fry for a few minutes more until the fat begins to render. Add the chilli and the potatoes. Saute for a minute then add hot stock. Add the cabbage and simmer for 10 minutes, or until the potatoes are cooked. Add the butter beans and simmer a couple more minutes. Season with two peppers (the white really adds to the kick of the chilli) and salt. Serve with nice bread to soak up the juices. Yummy.

That sounds delicious, I'll have to try that! I've really got in to soups this year. I made parsnip and pear soup last weekend, it was yummy!
