Carrot, lentil and lemon soup
I see your daal, and I raise...
2 tbsp olive oil
1 medium onion, chopped
1 stick of celery, chopped
1 clove of garlic, squished and chopped
4 medium carrots, chopped/sliced/diced, doesn't matter
4 oz red lentils
1 1/2 pints of stock
zest of half a lemon
2 tbsps lemon juice
Sweat the onion, celery and garlic in the olive oil until soft. Add the carrots and let cook for 5 minutes over a gentle heat. Add the lentils, mix in so covered in oil, cook for a minute. Add stock, simmer until carrots are tender and lentils cooked. Add salt and pepper to taste and the lemon zest and juice, and blend until smooth.

Ah, thanks! There are some good UK blogs out there, it's just a matter of finding them... My two current favourites are yarnstorm.blogs.com and ysolda.com- both knitting related and nicely put together.
