Breakfast banana, blueberry and vanilla muffins (vegan)
I had no eggs, so this recipe is vegan.
200g plain flour
2 level teaspoons baking powder
50g unrefined caster sugar
100ml soya/vegetable oil (one with not too much flavour) or melted soya spread
Few drops vanilla extract
100ml apple juice
2 mashed overripe bananas
large handful of blueberries, washed and dried thoroughly - must be completely dry
2 tablespoons (or thereabouts) or vanilla soya yoghurt
Few drops of white vinegar
- Preheat oven to 200C.
- Mix dry ingredients together.
- Mix oil/melted spread, vanilla, apple juice together.
- Add liquid to dry ingredients. Stir with a wooden spoon and add enough yoghurt to give a batter like consistency.
- Add mashed banana and blueberries, stir gently.
- Add few drops of vinegar and pour batter into muffin moulds, tray.
- Bake for 15-20 minutes.
- Cool, devour with redbush tea.
