Vegan fat free banana, apple and cinnamon muffins
100g plain white flour
100g wholemeal self raising flour
4 teaspoons baking powder
45g golden caster sugar
1/4 teaspoon ground cinnamon
2 mashed ripe bananas
4 heaped tablespoons apple stewed with cinnamon
Oat milk
Few drops rice vinegar
- Mix dry ingredients together.
- Add banana, apple and enough oat milk to make a loose batter.
- Add few drops rice vinegar.
- Mix lightly with a wooden spoon, just until the dry ingredients are wet.
- I put mine into 6 large muffin tins lined with baking parchment.
- Bake for 35 mins.
- Cool.
- Eat.
- Enjoy.
